Sweet Potato Mushroom Skillet with Baked Eggs

A delicious and healthy dish featuring sweet potatoes, mushrooms, and baked eggs, perfect for breakfast or brunch.

Ingredients

  • 2 medium sweet potatoes
  • 1 cup mushrooms
  • 4 slices turkey bacon
  • 4 eggs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pare and cube the sweet potatoes, then toss them in olive oil, garlic powder, salt, and pepper.
  3. Spread them on a baking sheet and roast for about 20 minutes.
  4. While they roast, cook turkey bacon in a skillet until crispy, then crumble it.
  5. Add mushrooms to the skillet with crumbled bacon and sauté until tender.
  6. Add roasted sweet potatoes to the skillet and stir everything together.
  7. Make wells in the mixture and crack an egg into each well.
  8. Transfer the skillet to the oven and bake until eggs are set.

Notes

  • Use any variety of mushrooms you prefer.
  • Feel free to substitute bacon with a different protein.
