- 2 medium sweet potatoes
- 1 cup mushrooms
- 4 slices turkey bacon
- 4 eggs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- salt to taste
- pepper to taste
- Preheat the oven to 400°F (200°C).
- Pare and cube the sweet potatoes, then toss them in olive oil, garlic powder, salt, and pepper.
- Spread them on a baking sheet and roast for about 20 minutes.
- While they roast, cook turkey bacon in a skillet until crispy, then crumble it.
- Add mushrooms to the skillet with crumbled bacon and sauté until tender.
- Add roasted sweet potatoes to the skillet and stir everything together.
- Make wells in the mixture and crack an egg into each well.
- Transfer the skillet to the oven and bake until eggs are set.
