  • 4 large russet potatoes
  • 1 pound ground turkey
  • 4 strips turkey bacon
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • 1/2 cup sour cream
  • 1 cup diced tomatoes
  • 1/2 cup chopped green onions
  • 1/2 cup black olives
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then poke holes in them with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. While baking, cook the turkey bacon in a skillet until crispy, then crumble it.
  5. In the same skillet, cook the ground turkey with the taco seasoning until browned.
  6. Once the potatoes are done, slice them open and fluff the insides.
  7. Top the potatoes with seasoned turkey, crumbled turkey bacon, cheese, sour cream, tomatoes, green onions, olives, and avocado.
  8. Serve immediately and enjoy!
