- 4 large russet potatoes
- 1 pound ground turkey
- 4 strips turkey bacon
- 1 cup shredded cheese
- 1 teaspoon taco seasoning
- 1/2 cup sour cream
- 1 cup diced tomatoes
- 1/2 cup chopped green onions
- 1/2 cup black olives
- 1 avocado, sliced
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then poke holes in them with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- While baking, cook the turkey bacon in a skillet until crispy, then crumble it.
- In the same skillet, cook the ground turkey with the taco seasoning until browned.
- Once the potatoes are done, slice them open and fluff the insides.
- Top the potatoes with seasoned turkey, crumbled turkey bacon, cheese, sour cream, tomatoes, green onions, olives, and avocado.
