  • 1 can coconut milk (14 oz)
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1/2 cup chicken broth
  • 1 tablespoon vegetable oil

Instructions

  1. In a bowl, mix ground chicken, fish sauce, ginger, garlic, cilantro, and red curry paste.
  2. Form the mixture into meatballs.
  3. In a skillet, heat vegetable oil and brown the meatballs on all sides.
  4. Add coconut milk, chicken broth, lime juice, and brown sugar to the skillet.
  5. Simmer for 15 minutes until the sauce thickens and meatballs are cooked through.
  6. Serve over rice or noodles.
