A delicious vegan breakfast option that combines a tofu scramble with a toasted bagel for a filling and nutritious start to your day.

Ingredients

  • 1 block of firm tofu
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 whole grain bagels

Instructions

  1. Drain the tofu and crumble it into a bowl.
  2. In a skillet, heat olive oil over medium heat and sauté the onion and bell pepper until soft.
  3. Add the crumbled tofu, turmeric, garlic powder, salt, and pepper to the skillet. Cook for about 5-7 minutes, stirring occasionally.
  4. Toast the bagels while the tofu scramble is cooking.
  5. Serve the tofu scramble on top of the toasted bagels.

Notes

  • Feel free to add your favorite vegetables into the scramble.
  • For extra flavor, add nutritional yeast.
