- 1 can crushed pineapple
- 1 box vegan cake mix
- 1/2 cup unsweetened applesauce
- 1/3 cup coconut oil, melted
- 1 cup shredded coconut
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the crushed pineapple and its juice with the cake mix.
- Stir in the applesauce and melted coconut oil until well combined.
- Pour the mixture into a greased baking dish.
- Sprinkle the shredded coconut on top.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool slightly before serving.
