  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened.
  3. Stir in the garlic and turmeric, cooking for another minute.
  4. Add the lentils and vegetable broth to the pot, bringing to a boil.
  5. Reduce heat and simmer for about 25-30 minutes, or until lentils are tender.
  6. Stir in the lemon juice, salt, and pepper.
  7. Remove from heat and stir in parsley before serving.
