Vegan Peanut Butter Mousse (with a Chocolate Ganache!)

A rich and creamy Vegan Peanut Butter Mousse topped with decadent Chocolate Ganache.

Ingredients

  • 1 cup smooth peanut butter
  • 1 cup coconut cream
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder
  • 1/2 cup dark chocolate chips

Instructions

  1. In a mixing bowl, combine the peanut butter, coconut cream, maple syrup, vanilla extract, and cocoa powder. Beat until smooth and creamy.
  2. Transfer the mousse into serving glasses and refrigerate for at least 2 hours to set.
  3. For the ganache, melt the dark chocolate chips in a bowl. Pour over the set mousse before serving.
  4. Garnish with chopped peanuts or berries as desired.

Notes

  • For a sweeter mousse, adjust the maple syrup to taste.
  • Can be made a day ahead for easier serving.
