Vegan Shoyu Ramen

  • 2 tablespoons soy sauce
  • 2 tablespoons miso paste
  • 200 grams ramen noodles
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated

Instructions

  1. In a large pot, heat sesame oil over medium heat.
  2. Add garlic and ginger, and sauté until fragrant.
  3. Pour in vegetable broth, soy sauce, and miso paste; stir until well combined.
  4. Bring to a simmer, then add mushrooms and bok choy.
  5. Cook until vegetables are tender, about 5-7 minutes.
  6. Add ramen noodles and cook according to package instructions.
