  • 1 teaspoon ground coriander
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a saucepan, heat olive oil over medium heat.
  2. Add onions and sauté until translucent.
  3. Stir in carrots, zucchini, and bell pepper; cook until tender.
  4. Add cumin, coriander, salt, and pepper; stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Once boiling, remove from heat and stir in couscous.
  7. Cover and let it sit for 5 minutes.
  8. Fluff with a fork and garnish with fresh parsley before serving.
