  • 1 teaspoon vanilla extract
  • 1 large egg
  • 8 ounces cream cheese
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix shredded zucchini with sugar and butter.
  3. Add the egg and vanilla extract, then mix until combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Drop spoonfuls of dough onto a baking sheet and bake for 15-20 minutes.
  7. While cookies are cooling, prepare the cream cheese frosting by beating cream cheese and powdered sugar until smooth.
  8. Once the cookies are cool, spread frosting on top before serving.
