A delicious twist on traditional lasagna, these zucchini roll ups use turkey bacon and fresh ingredients for a lighter comfort food option.

Ingredients

  • 3 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cooked turkey bacon, chopped
  • 1 cup marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta, mozzarella, turkey bacon, basil, garlic powder, and salt.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Fill each zucchini strip with the cheese mixture and roll up.
  6. Place the rolls seam side down in the baking dish and cover with the remaining marinara sauce.
  7. Bake for 25-30 minutes until bubbly.

Notes

  • For added flavor, sprinkle extra mozzarella on top before baking.
