  • 4 slices turkey bacon
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 6 cups chicken broth
  • 3 medium potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Sauté onion and garlic in the bacon drippings until softened.
  3. Add red pepper flakes and cook for another minute.
  4. Pour in chicken broth and add diced potatoes. Bring to a boil.
  5. Reduce heat, cover, and simmer until potatoes are tender.
  6. Stir in kale and heavy cream, cooking until heated through.
  7. Season with salt and pepper, then add crumbled bacon back into the pot.
