Budae Jjigae (Korean Army Stew)

Ingredients

  • 1 tablespoon vegetable oil
  • 8 ounces turkey bacon, chopped
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 cups kimchi
  • 4 cups chicken broth
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 8 ounces instant ramen noodles
  • 1 cup sliced mushrooms
  • 1 cup tofu, cubed

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the turkey bacon and cook until crispy.
  3. Add the onion and garlic, sauté until the onion is translucent.
  4. Stir in the kimchi, chicken broth, gochujang, and soy sauce. Bring to a boil.
  5. Add the ramen noodles, mushrooms, and tofu. Simmer until the noodles are cooked through.
  6. Serve hot and enjoy!

Notes

  • Feel free to add any other vegetables you like, such as zucchini or spinach.
  • Adjust the spice level by adding more or less gochujang.
