  • 8 ounces penne pasta
  • 1 pound shrimp, peeled and deveined
  • 1 cup sliced turkey bacon
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  3. Add bell pepper, onion, and garlic, and sauté until vegetables are tender.
  4. Add shrimp and cook until they turn pink.
  5. Stir in diced tomatoes and Cajun seasoning, cooking for a further 5 minutes.
  6. Pour in heavy cream and mix well.
  7. Add cooked pasta to the skillet, tossing everything to combine well.
  8. Season with salt and black pepper to taste, and serve hot.

Notes

  • For a spicier dish, add more Cajun seasoning.
  • Substitute shrimp with chicken if desired.
