Cheesy Baked Chicken and Roasted Potatoes

  • 4 boneless, skinless chicken breasts
  • 2 cups shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 pound baby potatoes
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat the chicken breasts with the mixture and place them in a baking dish.
  4. Cut the baby potatoes in half and season with salt and pepper.
  5. Add the potatoes to the baking dish around the chicken.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the potatoes are golden.
  7. Sprinkle shredded cheese on top of the chicken and return to the oven for an additional 5-10 minutes until melted.
