  • 4 slices turkey bacon, chopped
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1/2 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onions, carrots, and celery until softened.
  3. Add diced potatoes, chicken broth, thyme, and rosemary. Bring to a boil.
  4. Reduce heat and simmer until potatoes are soft.
  5. Stir in shredded chicken, frozen peas, heavy cream, and season with salt and pepper.
  6. Garnish with crispy turkey bacon before serving.

Notes

  • For a thicker soup, add a cornstarch slurry.
