Collard Greens Cajun Gumbo

A flavorful and hearty gumbo featuring collard greens and turkey bacon for a delicious twist on a classic recipe.

  • 1 pound collard greens
  • 8 ounces turkey bacon
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • 2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked rice

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the bacon drippings, sauté the onion, bell pepper, celery, and garlic until softened.
  3. Add the collard greens and stir until wilted.
  4. Pour in the chicken broth and add the Cajun seasoning, bay leaves, Worcestershire sauce, salt, black pepper, and cayenne pepper.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes.
  6. Serve over cooked rice, garnished with the crispy turkey bacon.

Notes

  • Adjust the spice level to your preference by adding more or less cayenne pepper.
  • This gumbo can be made a day in advance and tastes even better the next day.
