- 1 pound collard greens
- 8 ounces turkey bacon
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon Cajun seasoning
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 cups cooked rice
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the bacon drippings, sauté the onion, bell pepper, celery, and garlic until softened.
- Add the collard greens and stir until wilted.
- Pour in the chicken broth and add the Cajun seasoning, bay leaves, Worcestershire sauce, salt, black pepper, and cayenne pepper.
- Bring to a boil, then reduce heat and simmer for about 30 minutes.
- Serve over cooked rice, garnished with the crispy turkey bacon.
Notes
- Adjust the spice level to your preference by adding more or less cayenne pepper.
- This gumbo can be made a day in advance and tastes even better the next day.
