Cranberry Apple Twice Baked Sweet Potatoes

This delightful twist on a classic dish combines the sweetness of cranberry and apple with creamy sweet potatoes for an irresistible side.

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 cup diced apple
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 cup butter
  • 1/4 cup chopped pecans
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork. Bake for 45 minutes or until tender.
  3. Remove from the oven and let cool slightly. Slice in half lengthwise and scoop out the insides into a bowl.
  4. In a saucepan, combine cranberries, diced apple, maple syrup, and cinnamon. Cook over medium heat until cranberries are soft.
  5. Add the cranberry-apple mixture and butter to the sweet potato insides. Mix until smooth.
  6. Fill the potato skins with the mixture, top with chopped pecans, and bake for an additional 20 minutes.
