- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 1 cup diced apple
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1/4 cup chopped pecans
- 1/2 teaspoon salt
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork. Bake for 45 minutes or until tender.
- Remove from the oven and let cool slightly. Slice in half lengthwise and scoop out the insides into a bowl.
- In a saucepan, combine cranberries, diced apple, maple syrup, and cinnamon. Cook over medium heat until cranberries are soft.
- Add the cranberry-apple mixture and butter to the sweet potato insides. Mix until smooth.
- Fill the potato skins with the mixture, top with chopped pecans, and bake for an additional 20 minutes.
