  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 4 cups chicken broth
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 teaspoon ginger, grated
  • 1 cup bell peppers, diced
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a splash of oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  2. Add the bell peppers and cook until softened.
  3. Stir in the coconut milk, chicken broth, and fish sauce, and bring to a simmer.
  4. Add the jasmine rice and cook for about 15 minutes, or until the rice is tender.
  5. Fold in the shrimp and cook until they turn pink, about 3-5 minutes.
  6. Remove from heat, then stir in lime juice and cilantro.
  7. Season with salt and pepper to taste, then serve warm.
