  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken thighs
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cups frozen peas
  • 2 cups biscuit mix
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder

Instructions

  1. In a large Crock Pot, combine chicken broth, chicken thighs, carrots, celery, onion, peas, salt, pepper, thyme, and garlic powder.
  2. Cover and cook on low for 6-8 hours or until the chicken is tender.
  3. Remove the chicken and shred with a fork, then return to the Crock Pot.
  4. In a separate bowl, mix biscuit mix with milk until just combined.
  5. Drop spoonfuls of the biscuit mixture over the chicken mixture in the Crock Pot.
  6. Cover and cook for an additional 1 hour on high until the biscuits are cooked through.

Notes

  • For extra flavor, add a bay leaf during cooking and remove before serving.
