Crockpot Beef and Noodles

A comforting dish that’s perfect for busy nights, featuring tender beef and hearty noodles cooked to perfection in a crockpot.

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups frozen mixed vegetables

Instructions

  1. Heat the olive oil in a skillet over medium heat. Brown the beef on all sides, then transfer to the crockpot.
  2. Add onions, garlic, beef broth, Worcestershire sauce, salt, and pepper to the crockpot.
  3. Cook on low for 6-8 hours or until the beef is tender.
  4. About 30 minutes before serving, add the egg noodles and frozen vegetables to the crockpot.
  5. Stir and cook until the noodles are tender.
  6. Serve hot and enjoy.

Notes

  • For a thicker sauce, you can add a cornstarch slurry at the end of cooking.
  • Feel free to add other vegetables based on your preference.
