- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups egg noodles
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups frozen mixed vegetables
- Heat the olive oil in a skillet over medium heat. Brown the beef on all sides, then transfer to the crockpot.
- Add onions, garlic, beef broth, Worcestershire sauce, salt, and pepper to the crockpot.
- Cook on low for 6-8 hours or until the beef is tender.
- About 30 minutes before serving, add the egg noodles and frozen vegetables to the crockpot.
- Stir and cook until the noodles are tender.
