Crockpot Chicken Fried Rice

A fantastic family meal that combines the convenience of a crockpot with delicious flavors of chicken fried rice.

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 eggs, beaten
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced

Instructions

  1. Place the chicken in the crockpot.
  2. Add the cooked rice, peas and carrots, green onions, soy sauce, sesame oil, garlic powder, and ginger.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 4-6 hours.
  5. During the last 30 minutes, stir in the beaten eggs and cook until set.
  6. Serve warm and enjoy!

Notes

  • For extra flavor, add some chili flakes.
  • Make sure the chicken is thoroughly cooked before serving.
