Garlic Butter Parmesan Roasted Potatoes

These Garlic Butter Parmesan Roasted Potatoes are crispy on the outside and tender on the inside, tossed in a rich garlic butter sauce and topped with Parmesan.

  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a saucepan, melt the butter and sauté the minced garlic until fragrant.
  4. Toss the potatoes in the garlic butter, salt, and pepper.
  5. Spread the potatoes on a baking sheet and roast for 25-30 minutes.
  6. Sprinkle the roasted potatoes with Parmesan cheese and return to the oven for another 5 minutes.
  7. Garnish with fresh parsley before serving.

Notes

  • For extra crunch, broil the potatoes for the last few minutes of cooking.
