Hearty Slow Cooker Beef Pot Roast with Rich Gravy and Vegetables

Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh thyme
  • 1 bay leaf

Instructions

  1. Heat oil in a large skillet over medium-high heat. Season beef with salt and pepper, then sear on all sides until browned.
  2. Transfer beef to slow cooker. Add broth, carrots, potatoes, onion, garlic, Worcestershire sauce, thyme, and bay leaf.
  3. Cover and cook on low for 8 hours or until the beef is tender.
  4. Remove the beef and vegetables; skim the fat from the gravy.
  5. Thicken gravy if desired and serve with the beef and vegetables.

Notes

  • For extra flavor, marinate the beef overnight with herbs and spices.
