Honey Garlic Roasted Chicken Thighs with Potatoes and Vegetables

Delicious and easy honey garlic roasted chicken thighs paired with tender potatoes and colorful vegetables.

Ingredients

  • 4 chicken thighs
  • 1 pound baby potatoes
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon sesame seeds (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the honey, soy sauce, garlic, olive oil, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade.
  4. In a baking dish, arrange the baby potatoes and mixed vegetables.
  5. Place the marinated chicken thighs on top of the vegetables.
  6. Drizzle any remaining marinade over the chicken and veggies.
  7. Bake for 40-45 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Sprinkle with sesame seeds before serving, if desired.

Notes

  • For a crispier skin, broil the chicken for the last 5 minutes of cooking.
  • Feel free to use any seasonal vegetables.
