  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 green onions, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the potatoes and dry them, then pierce each potato with a fork.
  3. Bake potatoes for about 45 minutes, or until tender.
  4. While potatoes are baking, cook turkey bacon in a skillet until crispy, then crumble.
  5. Once potatoes are done, cut them in half and scoop out some of the flesh.
  6. Fill each potato skin with cheese and crumbled bacon.
  7. Return to the oven and bake until the cheese is melted.
  8. Top with sour cream and green onions before serving.
