MINI BLUEBERRY CHEESECAKES

  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 325°F (162°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of lined muffin tins.
  3. In another bowl, beat cream cheese until smooth. Add sugar and vanilla, mix well.
  4. Add eggs one at a time, mixing until fully incorporated.
  5. Fold in blueberries gently.
  6. Pour the cheesecake mixture over the crust in the muffin tins.
  7. Bake for 20-25 minutes until the centers are set.
  8. Let cool and then refrigerate for at least 4 hours before serving.
