New Mexico Green Chile Stew

A delicious and hearty New Mexico Green Chile Stew made with turkey bacon for a comforting dish.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups potatoes, diced
  • 4 cups chicken broth
  • 2 cups green chile, roasted and chopped
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. In the same pot, add olive oil and sauté onion and garlic until translucent.
  3. Add diced potatoes and cook for another 2-3 minutes.
  4. Pour in chicken broth, bring to a boil, and then reduce heat.
  5. Add green chiles, cumin, salt, and pepper; simmer for 20-30 minutes.
  6. Stir in the chopped turkey bacon before serving.
