No Bake Strawberry Cheesecake

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 2 cups fresh strawberries, sliced

Instructions

  1. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. In another bowl, whip the heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  4. Spread half of the cream cheese mixture over the crust, add a layer of strawberries, then top with the remaining cream cheese mixture.
  5. Refrigerate for at least 4 hours or until set. Top with remaining strawberries before serving.

Notes

  • For a flavored cheesecake, consider adding lemon zest or chocolate to the cream cheese mixture.
  • Make sure the cream cheese is at room temperature for easier mixing.
