  • 1 pound stew beef, cut into bite-sized pieces
  • 4 slices turkey bacon, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cups beef broth
  • 2 cups tomato juice
  • 1 can corn, drained
  • 1 can green beans, drained
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. Add stew beef to the pot and brown on all sides.
  3. Add onions, carrots, and celery, cooking until softened.
  4. Stir in garlic, thyme, salt, and pepper, cooking for an additional minute.
  5. Pour in beef broth and tomato juice, bringing to a boil.
  6. Add corn, green beans, and potatoes. Reduce heat and simmer for about 1 hour.
  7. Return turkey bacon to the pot and stir. Cook for an additional 15 minutes.
