- 1 pound stew beef, cut into bite-sized pieces
- 4 slices turkey bacon, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cups beef broth
- 2 cups tomato juice
- 1 can corn, drained
- 1 can green beans, drained
- 2 potatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- Add stew beef to the pot and brown on all sides.
- Add onions, carrots, and celery, cooking until softened.
- Stir in garlic, thyme, salt, and pepper, cooking for an additional minute.
- Pour in beef broth and tomato juice, bringing to a boil.
- Add corn, green beans, and potatoes. Reduce heat and simmer for about 1 hour.
- Return turkey bacon to the pot and stir. Cook for an additional 15 minutes.
