  • 8 ounces rice noodles
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 carrots, julienned
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 1 cup cabbage, shredded

Instructions

  1. Soak the rice noodles in warm water for about 20 minutes, then drain.
  2. In a large skillet, cook the turkey bacon until crispy, then remove and set aside.
  3. In the same skillet, add vegetable oil, onion, carrots, and bell pepper, and sauté until soft.
  4. Add the chicken ham and cabbage, cooking until the cabbage wilts.
  5. Stir in the soaked rice noodles and soy sauce, mixing well to combine.
  6. Top with chopped green onions and the crispy turkey bacon before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes.
  • Add more vegetables according to your preference.
