This Patriotic 4th of July Cake Roll is an easy and festive dessert perfect for celebrating Independence Day!

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberries, chopped
  • 1/2 cup blueberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 15×10-inch jelly roll pan with parchment paper.
  2. In a bowl, sift together flour, baking powder, and salt; set aside.
  3. In another bowl, beat eggs and sugar until thick and pale, then stir in vanilla and milk.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 12-15 minutes, or until the cake springs back when touched.
  7. While warm, roll the cake with the parchment paper, then let it cool completely.
  8. In the meantime, whip the cream with powdered sugar and vanilla until stiff peaks form.
  9. Unroll the cooled cake, spread with whipped cream, and top with strawberries and blueberries.
  10. Re-roll the cake, cover, and refrigerate for at least 1 hour before slicing and serving.

Notes

  • For a fun twist, add food coloring to the whipped cream to make it more festive.
  • This cake roll is best enjoyed the same day it’s made.
