Ingredients

  • 5 pounds potatoes
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 3 hard-boiled eggs, chopped
  • 1 cup turkey bacon, cooked and crumbled
  • 1/2 cup green onions, chopped
  • 1 tablespoon Dijon mustard
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender. Drain and let cool.
  2. In a large bowl, combine mayonnaise, sour cream, and Dijon mustard.
  3. Add the cooled potatoes, eggs, turkey bacon, and green onions to the bowl.
  4. Mix gently until combined. Season with salt and pepper.
  5. Chill in the refrigerator for at least 2 hours before serving.
