- 1 cup rice
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 cup shrimp, peeled and deveined
- 1 cup mussels, cleaned
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 2 tablespoons olive oil
- 1/4 cup green onions, chopped
- 1/4 cup parsley, chopped
- In a large skillet, heat the olive oil over medium heat.
- Add the turkey bacon and cook until crispy. Remove and chop.
- In the same skillet, sauté onions and garlic until translucent.
- Add rice and stir to coat.
- Pour in chicken broth and bring to a boil.
- Add chicken ham, shrimp, and mussels.
- Season with Cajun seasoning, black pepper, and stir well.
- Reduce heat and cover, cooking until the rice is tender.
- Stir in chopped turkey bacon, green onions, and parsley before serving.
Notes
- For extra spice, add more Cajun seasoning to taste.
- Feel free to substitute seafood with your preferred protein.
