- 4 large potatoes
- 1 pound shrimp, peeled and deveined
- 1 cup cream cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
- Preheat the oven to 400°F (200°C).
- Wash and bake the potatoes for about 45 minutes, or until tender.
- In a skillet, melt the butter over medium heat, then add the shrimp and cook until pink.
- In a mixing bowl, combine cream cheese, cheddar cheese, sour cream, garlic powder, paprika, black pepper, and green onions.
- Add cooked shrimp to the mixture and stir until well combined.
- Once the potatoes are done, cut them in half and scoop out some of the insides.
- Mix the potato insides with the seafood mixture and fill the potato skins.
- Bake for an additional 10 minutes until heated through.
