Slow Cooker Mississippi Beef Stew: Easy Comfort Food Delight

  • 2 pounds beef chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup pepperoncini peppers
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 carrots, sliced
  • 4 potatoes, diced

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sear the beef chuck roast on all sides until browned.
  2. Transfer the beef to the slow cooker and add ranch seasoning, au jus mix, beef broth, garlic, onion, carrots, potatoes, and pepperoncini peppers.
  3. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  4. Once cooked, shred the beef with two forks and stir it back into the stew before serving.

Notes

  • For a richer flavor, add a splash of red wine to the stew.
  • Adjust the level of pepperoncini to taste depending on how spicy you want the stew.
