- 4 cups sliced yellow squash
- 1 cup diced onion
- 1 cup turkey bacon, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup crushed buttery crackers
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the turkey bacon until crispy. Set aside.
- In the same skillet, sauté the sliced squash and onion until tender.
- In a large bowl, combine the cooked squash mixture, turkey bacon, cheddar cheese, sour cream, eggs, salt, and pepper. Mix well.
- Pour the mixture into a greased casserole dish.
