  • 4 cups sliced yellow squash
  • 1 cup diced onion
  • 1 cup turkey bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crushed buttery crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the turkey bacon until crispy. Set aside.
  3. In the same skillet, sauté the sliced squash and onion until tender.
  4. In a large bowl, combine the cooked squash mixture, turkey bacon, cheddar cheese, sour cream, eggs, salt, and pepper. Mix well.
  5. Pour the mixture into a greased casserole dish.
  6. Top with crushed crackers.
  7. Bake for 30-35 minutes or until golden brown.
  8. Let it cool for a few minutes before serving.
