  • 4 medium potatoes, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 2 cups shredded cheese
  • 1 cup diced tomatoes
  • 1 cup beef broth

Instructions

  1. In a large skillet, brown the ground beef over medium heat and drain any excess fat.
  2. In the crockpot, add the diced potatoes, black beans, corn, taco seasoning, diced tomatoes, and beef broth.
  3. Stir to combine the ingredients well.
  4. Add the browned ground beef to the crockpot and mix everything together.
  5. Cover and cook on low for 6-8 hours or until the potatoes are tender.
  6. In the last 30 minutes of cooking, sprinkle shredded cheese on top and allow it to melt before serving.
