Taco Pasta Salad

Taco Pasta Salad combines the delicious flavors of tacos with pasta in a unique and satisfying salad.

Ingredients

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 avocado, diced
  • 1/2 cup shredded cheese, cheddar or Mexican blend
  • 1 red bell pepper, diced
  • 1 green onion, sliced

Instructions

  1. Cook the rotini pasta according to package instructions; drain and allow to cool.
  2. In a skillet, cook the turkey bacon until crispy, then chop.
  3. In a large bowl, combine the cooked pasta, cherry tomatoes, black beans, corn, avocado, cheese, bell pepper, green onion, and turkey bacon.
  4. Toss gently to combine.
  5. Serve immediately or chill in the refrigerator for an hour before serving.
