  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 2 tablespoons vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions, then drain and cool.
  2. In a skillet, cook the turkey bacon until crispy, then crumble it.
  3. In a large bowl, combine the cooled pasta, turkey bacon, tomatoes, cucumber, onion, bell pepper, and parsley.
